Stir-Fry Turkey and Vegetables

Stir-Fry Turkey and Vegetables

If you are one of the people always on the rush then preparing a stir fry should be your favorite meal. Healthy, composed mostly of fresh, unprocessed ingredients, fast and tasty. What I like most about stir-fries is the fact that there are so many ways to bring variety into this simple and quick fix meal.

Ingredients

  • 400 grams of turkey breast stripes
  • 1 onion coarsely chopped
  • A bowl of snow peas (fresh or frozen)
  • A bowl of green beans (fresh or frozen)
  • A bowl of red bell pepper, cut in stripes
  • A few slices of spicy chili pepper, seeds removed (fresh)
  • A small piece of sliced fresh ginger
  • 3 garlic cloves sliced or chopped
  • 2 tablespoons fish sauce
  • 2 tablespoons white or brown sugar, or organic honey
  • Salt or 2 tbs of low-sodium soy sauce
  • 2 tbs of coconut oil
  • A pinch of raw cashews

Prep Instructions

  1. Heat up oil in a pan. Add turkey breast stripes and cook on high until browned (approx. 8-10 min). Set turkey stripes aside.
  2. On the same pan add green beans, onions, bell pepper, garlic, ginger and spicy red pepper. Stir fry on high for 2 minutes and add fish sauce, sugar or honey and soy sauce.
  3. Saute for further 5-7 minutes. Only then add snow peas – it cooks very quickly and retains nice crunchy structure and its color is so lovely and brings so much liveliness into the whole mix.
  4. Add turkey stripes and mix all ingredients tenderly but thoroughly. Throw in some raw cashews for the last 2-4 minutes.
  5. Serve as is or with a serving of Jasmine rice as a side. If you have deserved the carbs (moved actively throughout the day or had a nice workout session before the meal).
