I am going to be honest. I hate wasting food and it happens that sometimes I am left with some ingredients that if not used soon would get wasted. My response is prepare a quick stir and fry session. Let’s get rolling Foodies!
Ingredients
1 chicken breast, sliced thinly
2 carrots, cut into thin stripes
2 onions, roughly chopped
1 garlic clove, crashed
A piece of fresh ginger, crashed or thinly cut
1 tablespoon low sodium soy sauce
1 teaspoon honey
Dash of red spicy chili flakes
Salt
1 tablespoon coconut oil
Prep Instructions
In a wok heat up the coconut oil. Make sure it is really hot. When it is add chicken stripes and stir fry it so the chicken gets browned on each side. Set aside.
In the same wok add the prepared vegetables and mix well frying for 2-3 minutes. Then add ginger, garlic, soy sauce, salt, honey and pepper flakes. Stir well and fry for additional 2-3 minutes.
Add the cooked chicken to the vegetables and mix well. Cook for farther 5 minutes.
