STRAWBERRIES AND BABY SPINACH SALAD

Strawberries on baby spinach leaves

You cannot get it any lighter. If you drizzle it with Crema con aceto balsamico de Modena (balsamic vinegar creme), the lightness of the baby spinach leaves and the freshness of the strawberries create a flavor and sensation of the very first date. And it is so easy and fast to prepare it. You can stick this dish together in no time. No time not an excuse.

Ingredients

  • 2 cups of baby spinach leaves
  • 1 cup of fresh strawberries
  • Cream of balsamic vinegar
  • Sunflower seeds
  • Mix of raw, unsalted nuts (optional)

Prep Instructions

  1. Wash the spinach leaves and fresh strawberries under cold fresh water.
  2. Cut strawberries in halve.
  3. Chop or not spinach leaves and place on a plate.
  4. Top with cut strawberries.
  5. Sprinkle with extra virgin olive oil and balsamic vinegar creme
  6. Top with sunflower seeds and your favorite nuts (optional)

You can not get it any lighter. Seriously. What I do to compensate the lack of carbs is to add a protein treat with more healthy fat caloric punch. I love fish and sardines sprinkled with freshly squeezed lemon and some olive oil are the perfect partner in crime. Loaded with the magic nutritious spinach leaves, tender and sweet strawberries and a pack load of protein and omega-3s sardines. But beware and don’t overdo it with the amounts. Sardines with all great health benefits are pretty high in cholesterol.
