Super Fast Leftovers Greek Salad

It’s really a normal salad but I called it Greek as the ingredients I had in my fridge did actually fit into what a Greek Salad carries. This recipe represents one of the meals that one can come up with in matter of minutes using just the ingredients left over after a few days into a week.


  • 1 cucumber
  • 2 tomatoes
  • 4-6 green olives
  • 1 onion, peeled and chopped
  • extra virgin olive oil
  • freshly ground black pepper
  • 200 g feta cheese
  • 4 ice lettuce leaves, chopped

Prep Instructions

  1. Wash all veggies under cold water.
  2. Coarsely chop cucumber, ice lettuce leaves and onion.
  3. Half the tomatoes and mix with cut vegetables and olives.
  4. Crumble feta cheese and place on top of mix of veggies and sprinkle with extra virgin olive oil.

This is a perfect way yo use some leftover veggies from your fridge in a tasty and filling way. I added my favorite side dish with this salad: German Pretzel toasted and served hot with the amazing crunch.
