Super Simple Tuna Loaded Salad

Super Simple Tuna Loaded Salad

Once in a while I enjoy the old lean canned tuna. But let’s make it very clear right now. If it is a dry no oil no colors plain tuna this is not what I mean. You need to add a bit of twist to make this work. Check this beautiful, colorful, crunchy and nutrients loaded salad.

Let’s get grilling Foodies!

  • 1 ice lettuce head
  • 1 small can of tuna in water
  • 1/4 cup black olives
  • 1 cup pinto beans (canned or cooked, I used canned)
  • 2-3 nice tomatoes
  • 1/2 a red onion
  • 1/4 cup yogurt
  • 1 teaspoon light mayo (optional)
  • 2 teaspoons extra virgin olive oil
  • Sriracha hot sauce (optional – I used a few drops to wind up the spiciness level)

Prep Instructions

  1. It is all about layers. On a big plate place lettuce leaves. You can unevenly break them into smaller pieces.
  2. Add beans on top of lettuce distributing randomly on lettuce.
  3. Place roughly chopped tomatoes, onion, and whole black olives as another layer.
  4. In a separate small bowl add tuna (drain away water), yogurt, mayo (optional), thinly chopped onion and some ground cayenne pepper (to spice this mix up – optional depending on your spiciness resistance). Mix well all the ingredients into a consistently smooth paste.
  5. Place a portion of tuna paste on top of all the veggies layers with pinto beans.
  6. Sprinkle with olive oil and Sriracha spicy sauce (optional).
  7. Serve immediately and enjoy slowly.
  8. Tip: you can use the paste for making amazing wraps with tuna paste and varieties of veggies. Will post some more  ideas around the healthy wraps very soon. Keep coming back Foodies.
