Tofu Scramble Tortilla Lasagna

Tofu Scramble Tortilla Lasagna


  • 1 batch home-made enchilada sauce
  • 400 grams ounces firm tofu scrambled in a water filled blender
  • 1 tablespoon coconut oil
  • 10 round corn tortillas (cut into thin strips, 20 cm in diameter)
  • 1 cup light mozarella cheese
  • Black or pinto beans for serving
  • Parsley or coriander, finely chopped for serving

Prep Instructions

  1. Prepare the enchilada sauce in a blender (recipe available here). Pour into a pan and simmer over low heat.
  2. Place tofu cut into cubed into a blender filled with water and pulse-blend 3-4 times on high. Drain well the water and set the scrambled tofu aside.
  3. Preheat the oven to 200 degrees C.  In a skillet heat up coconut oil and add scrambled tofu. Add 1 cup of sauce to the skillet and simmer for 5 min.
  4. In a greased baking pan, layer tortillas, tofu, sauce, and cheese. Place cheese on the last layer, you won’t regret it when you taste the crusty layer.
  5. Bake for 20 minutes.

I have to admit that this meatless dish came out so dense and has such a rich flavor that I honestly did not miss the meat part. An important element is to have the tofu nicely scrambled in a blender filled with water (at least this is my recent method that works perfectly). The scrambled tofu adds to the creamy consistency of this dish. Of course the sauce has also lots to do with it.

Beware lean eaters! It is very easy to go overboard with cheese. If you want to limit the caloric value of this dish make sure you don’t throw tons of cheese on each layer. And also use the light version of Mozzarella.  This way you get the best of the two worlds: melted cheese and a dish that you will not have to burn with numerous workout sessions.
