TURKEY MEAT BALLS ON RICE AND SPINACH

TURKEY MEAT BALLS ON RICE AND SPINACH

Quite complete and balanced meal. This meal and especially the meat balls is a very scalable element. By that I mean to always prepare more and freeze for later. It is very easy to just sneak out some frozen meat balls the night before and combine with your preferred side dish whether a starch or just nice salad. Let’s get rolling Foodies!

Ingredients

  • 1 kilo ground lean beef
  • 1 whole egg
  • 1 onion, chopped
  • 1/4 whole wheat rolled oats crumbs
  • Fresh thyme
  • 2 garlic cloves, crushed
  • Salt and pepper
  • 2 cups baby spinach
  • 1 cup jasmine rice
  • 1/2 frozen peas

Prep Instructions

  1. In a bowl place ground meat. Crack the egg, add thinly chopped onion, ground rolled oats, thyme, garlic, salt and pepper to taste.
  2. With your hands (wash them carefully before) form equally sized meat balls. Tip: soak your hands in cold water in a separate bowl between shaping each meatball.
  3. Place all meatballs on a baking sheet sprayed with some olive oil.
  4. Cook the meatballs in the oven in the temperature of 180 degrees Celsius for 25 minutes.
  5. While meatballs are being cooked in the oven prepare your side dish.
  6. Bring 1 cup of water to boiling. Add 1/2 cup Jasmine rice and cook on slow for 10 minutes mixing from time to time.
  7. When rice has been cooked, mix it with peas and baby spinach while rice is still warm.
  8. Serve immediately and freeze the rest of meatballs for later.
