Combination of different flavors cooked in one skillet. I use for the cod my magic choice of spices that I buy in a Turkish specialty store. The richness of it is an amazing experience.
Ingredients
1/2 cup bulgur
1/2 kg of cod fillets
1 fist size serving of frozen snow peas
1 fist size serving of frozen or fresh green beans
Turkish spice mix (mix of ground cumin, cardamon, garlic salt, turmeric, white pepper, salt)
Olive oil
Prep Instructions
Bring 1 cup of cold water to boil in a medium size pan. When water is boiling add burgul and a pinch of salt and turmeric powder. Cook on low for 8-10 minutes mixing from time to time. Bulgur should absorb all the water. Transfer bulgur to a separate dish and let it cool down while you prepare cod and vegetables on a skillet.
Rub spice mix into cod fillets.
Heat 1 tsp of olive oil in a skillet and add spiced cod. Cook on medium heat for 10 minutes. Set cod aside.
Onto the same skillet add green beans and snow peas. Cook all for 10 minutes.
Add gradually bulgur and mix gently but well with green beans and snow peas.
On top of bulgur and vegetable mix place cooked cod and mix gently with the bulgur and veggies mix.
Pairs perfectly with a lassi – a traditional Middle-Eastern refreshing yogurt-based drink (a mixture of Greek yogurt – 1 cup, water – 1/2 cup, pinch of salt and dried mint mixed well in a blender).
Bulgur has more fiber than quinoa, oats, millet, buckwheat or corn. Its quick cooking time and mild flavor make it ideal for those new to whole grain cooking.
