VEGETARIAN BEAN CHILI

Tons of ingredients, long cooking time but you still can do whatever while it is cooking. Why? Slow Cooker comes to the rescue. Yes it is enough to prepare the ingredients, mix it all well in a slow cooker and leave it for 6-7 hours. Go for a walk or run, walk your dog, leave your flat or set it overnight and go to sleep. It cooks itself. And you will love the richness and taste deepness of this dish. Plus it is a big portion so you will fill your freezer for the busy days. Let’s get rolling Foodies!

Ingredients

  • 2 onions chopped
  • 2 red bell peppers, stemmed, seeded and chopped
  • 2 jalapeno chilies stemmed, seeded and chopped
  • 3 tablespoons of olive oil
  • 9 garlic cloves, minced
  • 3 tablespoons chili powder
  • 4 teaspoons mustard seeds
  • 1 tablespoon minced canned chipotle chilie in adobe sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 and 1/2 cups vegetable broth
  • 1 and 1/2 cups water
  • 1 pound dried black beans rinsed with water
  • 10 ounces white mushrooms trimmed and halved
  • 2 bay leaves
  • 1 (28-ounce) can whole peeled tomatoes drained and cut into 1/2 inch pieces
  • 10 ounces of firm tofu (cubed)

Prep Instructions

  1. Place all ingredients into slow cooker and stir well.
  2. Cover and cook until beans are tender, 9 to 10 hours on low or 6-7 hours on high setting.
